A truly memorable dinner at Kol, the just-opened Mexican restaurant by the former Noma chef Santiago Lastra @santiagolas, who was also behind the now legendary Noma pop-up in Mexico a few years ago. Cosy and quiet intimate for London standards, all the action at Kol takes place in the center of the dining room, at the open kitchen. The flavours are bold, authentic and with a slight Scandinavian touch, embark you on a voyage to the heart of Mexico… The freshly made tacos with grilled octopus, bone marrow and Jerusalem artichoke were sublime, as were “Enoki and Cornish crab chalupa, pistachio and fermented gooseberries” or langoustine tacos with smoked chilli, seabuckthorn and its juice. And of course, the main course, fantastic “carnitas”, confit pork cheek, served with cabbage leaves, gooseberry salsa and black beans.
